Whenever I run out of recipe ideas, I bake these crispy oven-roasted baby potatoes. You can never go wrong with Casual Cooking‘s recipe. Everybody loves these snacks as they are crispy, flavorful, and addicting. They are always a crowd favorite, no matter what the occasion is. I bet they will be gone in just a few minutes.

Potatoes are one of the most versatile vegetables. No matter what cooking method you choose, they always turn out incredible. My favorite way to cook them is by baking them in the oven. I am also a big fan of fried potatoes, but baking is healthier because it requires less oil.
Make them at home, and I am sure they will be an instant hit!
Start by cleaning the skin of the baby potatoes. Make sure to remove all the dirt, especially in the crevices. Pat them dry. Preheat your oven to 425F.
Slice each potato in half and place on a baking sheet lined with aluminum foil.
Drizzle 1 tablespoon of olive oil and toss to coat the potatoes.
In a small bowl, combine 1/2 tablespoon of Italian seasoning, 1 teaspoon of garlic powder, 1/2 teaspoon of kosher salt, and 1/4 teaspoon of black pepper. Mix until well.
Sprinkle over the potatoes. Mix with your hands to coat the potatoes. Spread them in a single layer.
Place inside the oven and bake at 425F for 15 minutes.
After 15 minutes, remove from the oven and carefully flip each piece using a tong.
Place the potatoes back in the oven and bake for 10 to 15 minutes more or until golden brown and tender. Cooking time may vary depending on your oven and the size of the potatoes, so keep an eye on them.
Transfer to a bowl and serve. Enjoy!
