It’s very easy to make and cooks quickly in just a few minutes. To enhance the flavors of this dish, be sure to add the adobo sauce from the chipotle peppers. If you don’t like it too spicy, you can remove the seeds. The creaminess from the cream and cheese perfectly balances the spiciness, making this dish a delicious choice to pair with rice, pasta, or mashed potato.

Season the chicken with lemon pepper, smoked paprika, garlic powder, onion powder, and salt on all sides.
Place a pan over medium-high heat and add some oil. Once hot, add the seasoned chicken breast and cook until browned about 1 minute per side. Set aside.
Turn the heat to medium-low heat and add 1 tablespoon of oil and 3 tablespoons of unsalted butter to the same pan. Once melted, saute diced onion and until translucent. Next, add minced garlic and cook until fragrant, then add the flour. Cook for another minute.
Add the chopped chipotle peppers and adobo sauce. Mix well, then slowly pour the chicken broth. Mix and deglaze the pan. Let it come to a low simmer.
Add the cream cheese and whisk into the sauce. Next, whisk in the table cream. Make a taste test and adjust the seasonings if needed.
Add the sliced red tomatoes and spinach. Gently mix, then add the chicken back into the pan. Place the lid and let it simmer for 10 minutes on low heat.
Garnish with chopped parsley and serve with pasta, rice, or mashed potatoes.
