  • 1 tbsp olive oil
  • 2 lbs chicken breasts, boneless, and skinless
  • ¼ tsp salt, or to taste
  • ¼ tsp pepper, or to taste

Tuscan Sauce

  • 1 tbsp oil, from sun-dried tomatoes
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, drained, chopped
  • 6 ounces spinach, chopped
  • 1½ cups half-and-half
  • 1 tbsp Italian seasoning
  • ¼ tsp salt, or to taste
  • ¼ tsp pepper, or to taste
  • ½ cup Parmesan cheese, freshly grated
  • 1 tbsp fresh basil, for garnish


Step 1

Cut the chicken into long thin pieces, then place a large skillet on a stove over medium-high heat, and heat up the olive oil. Add the chicken, then cook them for about 3 minutes on each side or until evenly browned and cooked, and set them aside on a plate. In the same skillet pan, add the oil of the sun-dried tomato, then lower your heat setting to medium, add the onion, and allow them to cook for about 5 minutes or until softened and translucent.


Step 2

Add the garlic, then let them saute for 30 more seconds or until fragrant, and add the sun-dried tomatoes. Give them a good toss, then cook them for 1 minute before adding the spinach, and then let them cook for another 1 to 2 minutes or until wilted. Pour in the half-and-half, then season them with Italian seasoning, salt, and pepper, and stir them all together to combine.

Step 3

Bring it to a boil, then lower the heat setting, and allow it to simmer. Add the parmesan cheese, then stir them together until melted and the sauce has thickened and then put the cooked chicken back into the pan. Let them cook for another minute until the chicken is heated through, then baste the chicken with the sauce, and garnish them with basil. Serve pasta, rice, or whatever you want and enjoy!
