Breakfast is the most important meal of the day. It keeps you full and ready to take on challenges. Here, Smokin’ & Grillin’ wit AB shares with us this delicious and fast to make country breakfast skillet that is packed with delicious ingredients to help you jump-start the day.

Ingredients:

  • 3/4 thick bacon
  • 4 Eggs
  • 1 chopped/quartered red potato
  • Chopped 1/2 green bell pepper
  • 1/4 cup shredded cheese
  • Garnish with parsley if desired
  • seasoned with salt and pepper
  • Butter

Directions:

Prepare all the needed ingredients.

Preheat the skillet over medium-high heat.

Chop 3/4 of the thick bacon into bite-sized pieces. Drizzle some olive oil in the medium-high-heated pan and fry the chopped bacon pieces. Let it fry until golden brown. Remove the bacon from the pan and transfer it to a bowl or plate lined with tissue paper. By placing the bacon on tissue paper, the excess oil from the bacon will separate into the tissue.

Chop the bell peppers and transfer them to a small bowl.

For the potatoes, use a dicer or manually dice them into small pieces and place them in a small bowl.

Sauté the diced potatoes and 1/2 of the chopped green bell pepper in the bacon drippings grease. Let the potatoes and bell pepper cook over medium-high heat for 8–10 minutes, or until the potatoes are softened and golden brown. Next, add the bacon bits to the skillet and let them cook while you stir them.

Put the cooked contents from the pan into a tissue lined plate and set aside.

In the same skillet, drop in some butter and crack in four eggs when the butter is melted. Let the eggs cook for 3-5 minutes.  Season each egg with a pinch of salt and pepper to taste. Then, pour the cooked potato mixture back into the skillet while arranging them around the eggs until the whole skillet is covered.

Sprinkle in some shredded cheese and cook until it melts. Garnish with parsley if desired.

Serve immediately and savor every bite!
