Ingredients:

  • 1/2 cup cottage cheese
  • 1/2 cup artichoke syrup
  • 1 tbsp chia seeds
  • 100 ml water
  • 3 tbsp corn flour
  • 1 1/3 tbsp coconut flour
  • 2 1/2 tbsp cocoa powder
  • 1 tsp baking soda

Directions:

Step 1

Grind 1 tbsp of chia seeds finely, then transfer to a small bowl. Pour in 100 ml cold water and let it steep for a while. In your food processor, add 1/2 cup cottage cheese and 1/2 cup artichoke syrup. Blend them together until combined. After this, transfer to a bowl and set aside. To another bowl, add 3 tbsp corn flour, 1 1/3 tbsp coconut flour, 2 1/2 tbsp cocoa powder, and 1 tsp baking soda. Whisk everything until combined. Sift the mixture into the wet mixture, fold them together, then stir in the chia seeds.

Step 2

Grease the baking pan with some oil, line it with parchment paper, then transfer the mixture. Spread nicely and evenly, then place the baking pan into a 350 degrees F oven. Bake for 30 minutes. In the meantime, make the glaze by combining some melted dark chocolate and milk (your desired consistency). Once done baking, poke some holes into the brownie using a toothpick, remove it from the pan, and then pour the glaze over. Slice it into small pieces and serve.
