For the snickerdoodle cookie dough

Churro frosting/buttercream
Make the cookie dough. Start by mixing flour, baking soda, cream of tartar, and salt. in the bowl. Once mixed, set aside.
In a different bowl, add the softened butter, white sugar, and brown sugar. Beat until light and fluffy using a hand mixer for about 3 minutes. Add eggs and vanilla extract. Beat until light and fluffy.
Add the dry ingredients to the butter-sugar egg mixture. Beat until well combined. Cover and place in the fridge for 30 minutes.
Make the cinnamon sugar mixture by combining the two ingredients in the bowl. Set aside.
Make the frosting. In a different bowl, add the cream cheese, salt, and unsalted butter. Whisk until light and fluffy. Add the powdered sugar and beat again. Next, add the vanilla extract, brown sugar, and cinnamon. Beat until smooth and creamy. Refrigerate for 15 to 20 minutes.
Scoop the cookie dough using an ice cream scoop to make 16 balls. Drop each one into the cinnamon sugar mixture to coat. Place 6 balls on a baking sheet lined with parchment paper. Make sure to space each one.
Bake at 375F for 8 to 10 minutes. Once done, remove from the oven and let the cookies cool for 10 minutes in the tray, then place them on the cooling rack to cool completely.
Once cooled, frost each cookie, then sprinkle the cinnamon sugar mixture on top.
