Ingredients:

  • 3 eggs
  • dark chocolate
  • 1 3/4 cups mascarpone
  • 1 tbsp vanilla extract (optional)

Directions:

Step 1

To start, separate the egg whites and the yolks. Add 1 tbsp vanilla extract to the yolks (optional), and 1 3/4 cups of mascarpone. Whisk until smooth. Next, whisk the egg whites until stiff peaks. Set aside. To another bowl, add a bar of roughly chopped dark chocolate, and melt it in a double boiler method. In the meantime, line your cake mold with parchment paper. Set it aside. Now, pour the melted dark chocolate (in two batches) into the mascarpone mixture and mix.

Step 2

Mix well, then fold in the beaten white eggs in batches until just combined. Once done, pour the batter into the prepared cake mold and smooth out the surface. Tap the cake two to three times to avoid air bubbles. Place the cake in a 350 degrees F oven and bake for 30 minutes. After 30 minutes, remove it from the oven, then place the cake mold in a water-resistant bowl filled with water, then place it back in the oven and bake for a further 30 minutes. Once done baking, turn off the oven and leave the cake inside for 30 minutes. Serve and enjoy!
