I have already tried plenty of cheesecake recipes, and I can say that this no-bake cheesecake recipe by El Mundo Eats is one of the best ones out there. Cheesecakes are so expensive when you buy them from cafes or restaurants. And most of the time, they are not well made. They either lack flavor or the texture is not right. If you are a fan of cheesecake and are tired of eating bad-tasting cheesecake at an expensive price, I suggest you make them at home instead.

Believe it or not, making cheesecake is actually easy. This chocolate cheesecake has three layers: cookie base, cheesecake, and chocolate ganache. With each bite, you can taste the three layers with different textures. The base adds a bit of crunch, which complements well with the smooth texture of the ganache and cheesecake. It is so good and the best one that I have tried in a while. Make sure to make it at home.

Add the Oreo cookies to a food processor and crush them into fine crumbs. Transfer to a container.
Mix in the melted unsalted butter, then transfer the mixture to a 7-inch springform pan. Press on the bottom of the pan to make the base. Freeze for about 30 minutes.
Cut the chocolate into small pieces and place in a heat-proof bowl. Melt in the microwave or using a double boiler. Set aside.
Add the cream cheese to a bowl and whisk until light and fluffy. Add 1 cup of icing sugar, 1 teaspoon of vanilla extract, and a pinch of salt. Mix until well combined.
Slowly pour the chocolate into the cream cheese mixture while continuously mixing.
Add the whipping cream to a different bowl and whisk until soft peaks.
Fold in the whipped cream into the cream cheese and chocolate mixture. Transfer to the base and smoothen the top. Place in the fridge overnight or until fully set.
Make the ganache. In a bowl, combine the chopped chocolate and warm whipping cream. Leave for 3 minutes, then gently whisk to combine. Pour on top of the chocolate cream cheese mixture. Place in the fridge for an hour or until the chocolate sets.
Run a knife around the pan and remove the sides of the pan. Garnish with raspberries if preferred. Serve and enjoy!
