It tastes like the ones you can get from a high-quality Chinese takeout restaurant or even better. The beef is so tender and flavorful. It is sautéed with fresh vegetables and noodles, then tossed into a sweet and savory sauce. The umami flavors of this dish will surely get you hooked! Serve it with crispy egg rolls.

Rinse the beef under cold running water for about a minute, then drain well. Add baking soda and massage into the meat for about a minute. Add the other marinade ingredients and mix well. Marinate for 15 minutes or up to overnight.
Make the sauce. Mix all dry ingredients in a bowl. Pour the chicken stock and whisk until everything is dissolved. Add in the wet ingredients and mix well. Set aside for later. (Make sure to stir before using)
Prepare the lo mein noodles according to package instructions. Drain well and toss with oil.
Place a wok or pan over medium-high heat. Add oil and swirl it around.
Add cabbage, onion, and carrot. Sauté for about 1 minute, then set aside.
Return your wok or pan to medium-high heat.
Add 1 tablespoon of oil, 1 tablespoon of ginger, and 1 tablespoon of garlic. Sauté for about 10 to 20 seconds.
Add noodles and toss well. Mix until noodles are pliable.
Bring back the beef and vegetables and mix until thoroughly mixed.
Move the noodles to one side of the pan or work, then deglaze the bottom with 1 tablespoon of Shaoxing wine. Toss with the noodles.
Stir the sauce mixture and move the noodles to one side again. Add the sauce to the pan, not on top of the noodles. Cook for about 15 to 20 seconds until thickened, then switch off the heat.
Stir in the noodles into the sauce. Add chopped green onions and bean sprouts. Mix well then serve.
