Easy Chicken Sausage and Shrimp Pasta Jambalaya Ingredients

  • 4 tablespoons of olive oil
  • 1 pound of chicken breast (cut into pieces)
  • 1/2 pound of shrimp (deveined)
  • 1/2 pound of andouille sausage (sliced into half-inch thick pieces)
  • 2 tablespoons of cajun spice blend
  • 1/2 cup of red bell peppers (diced)
  • 1/2 cup of green bell peppers (diced)
  • 3/4 cup of diced onion
  • 3 cloves of garlic (minced)
  • 1 teaspoon of thyme
  • 1 bay leaf
  • 8 ounces of tomato sauce
  • 1/2 teaspoon of red pepper flakes
  • 1 medium tomato (diced)
  • 1 cup of chicken broth
  • 1 pound of fettuccine pasta (cooked al dente – do not rinse)
  • salt and pepper to taste
  • parsley

How to Make Chicken Sausage and Shrimp Pasta Jambalaya

Step 1:

Cook the pasta for about 10 minutes or until al dente. Strain, then set aside.

Step 2:

Place a pan over heat, then add 3 to 4 tablespoons of oil. Add the shrimp into a bowl and season with cajun spice. Mix well. Do the same for the chicken.

Step 3:

Once the oil is hot, add the seasoned shrimps. Cook for 2 to 3 minutes on each side, then set aside. Next, add the seasoned chicken and cook until browned. After that, cook the sausage until nicely browned. Add the onion, garlic, and bay leaf. Cook until the onions are soft.

Step 4:

Add the bell pepper and tomatoes to the sausage. Season with red chili flakes, oregano, black pepper, thyme, and cajun seasoning. Mix until well incorporated. Cook for about 2 minutes.

Step 5:

Add the tomato sauce and chicken stock. Bring back the chicken and cover with the lid. Allow it to come to a boil.

Step 6:

Add the pasta and mix well. Once mixed, bring back the shrimp and mix again. Cover and let it simmer for a few minutes.
