Does this recipe look familiar? It is similar to your chicken cutlets, chicken katsu, and schnitzel. Chicken (or pork) is thinly pounded, breaded, then pan-fried until crispy and golden brown. Unlike other recipes, this chicken milanese does not require flour, making the inside of the chicken moist and the outside crispy. Serve it with mashed potatoes, arugula salad, baked beans, broccoli, or green beans and you have a complete meal at home.

Place the chicken breasts into a zipper bag and pound evenly using a rolling pin or meat mallet.
Whisk 2 eggs in a large bowl. In a separate bowl, mix the Italian breadcrumbs and panko breadcrumbs.
Dip the chicken breasts into the egg, then coat with breadcrumbs. Make sure both sides are well coated.
Heat a 12-inch skillet over medium heat and add the peanut oil or canola oil. It will take about 2 to 3 minutes before the oil is ready. It will look like a wind blowing across the oil making the oil shimmers. That’s when you know it is ready.
Add the coated chicken and fry for 3 to 4 minutes on each side. Do not touch it. Once you see it golden around the edges, time to flip it. Continue cooking for 3 to 4 minutes. Once done, place on a cooling rack on top of a baking sheet. As soon as they come out of the oil, sprinkle vigorously with kosher salt.
Squeeze lemon on top and top with chopped parsley.
