Ingredients:
Pasta:
- 10.5 oz pasta shapes
For the Chicken:
- 2 tbsp olive oil
- 3 chicken breasts
- 1/4 tsp salt
- 1/2 tsp ground black pepper
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1 1/2 tsp paprika
- 1/4 ta garlic powder
For the Sauce:
- 1 onion, peeled and sliced
- 2 cloves of garlic, peeled and minced
- 1 cup sun-dried tomatoes
- 1 red bell pepper, de-seeded and sliced
- 2 tbsp tomato paste
- 1/3 cup white wine
- 1 cup chicken stock
- a pinch of salt and pepper
- 1/3 cup heavy cream
- 1/2 cup parmesan cheese, grated
- 3 cups fresh baby spinach
- 1 tbsp chopped parsley
Directions:
Step 1
Cook the pasta shapes according to the package instructions. Heat 2 tbsp olive oil in a large pan over medium heat. Once heated, add the chopped chicken breasts and season with 1/4 tsp salt, 1/2 tsp ground black pepper, 1 tsp dried oregano, 1/2 tsp dried thyme, 1 1/2 tsp paprika, and 1/4 ta garlic powder. Mix well and fry for five to six minutes. Next, add the sliced onion, and saute until soft. After this, stir in the minced garlic, 1 cup sun-dried tomatoes, sliced red bell pepper, and 2 tbsp tomato paste. Stir together until combined.
Step 2
After two minutes, add 1/3 cup white wine and let it bubble for two minutes. After this, add 1 cup chicken stock and a pinch of salt and pepper. Stir together and simmer for five minutes. Now, add the cooked pasta to the pan along with 1/3 cup of heavy cream, 1/2 cup of parmesan cheese, and 3 packed cups of fresh baby spinach. Stir together and cook for a couple of minutes until the spinach wilts. Serve and enjoy!
