Ingredients:

  • 1 tbsp butter
  • 1 tbsp cooking oil
  • 1 green bell pepper, diced
  • 1/2 yellow onion, chopped
  • 16 oz smoked sausage, slice in 1/4″ circles
  • 1 tsp minced garlic
  • 1 can (14 oz) diced tomatoes
  • 4 cups broth (chicken, beef, or vegetable)
  • 16 oz dry uncooked elbow pasta
  • 1/2 cup sour cream
  • 8 oz shredded cheddar cheese, divided
  • salt and black pepper, to taste
  • dried parsley, for garnish

Directions:

Step 1

Heat a large deep skillet over medium-high heat, then add 1 tbsp butter and 1 tbsp cooking oil. Once the butter is melted, add the diced onions and green bell pepper. Saute them for three to four minutes until softened. Season with salt and ground black pepper to taste. Next, add the sliced smoked sausage and the minced garlic. Continue to cook until the sausages are nice and brown. Once the sausages are browned, add 1 can of diced tomatoes and 4 cups of broth.

Step 2

Turn the heat on high and bring everything to a boil (you can taste test at this point). Once boiling, stir in 16 oz dry uncooked elbow pasta, making sure they are submerged in the liquid. Turn the heat down to medium-low, cover the skillet with its lid, and cook for 15 minutes until the pasta is nice and tender. After 15 minutes, turn off the heat, then stir in 1/2 cup sour cream and 4 oz shredded cheddar cheese. Top it with the remaining shredded cheese and some dried parsley. Cover it and let it sit for a few minutes until the cheese fully melts.
