Cheesy Chicken Noodle Soup Casserole Recipe

Ingredients:

• 1  12 oz. Pkg. Wide Egg Noodles
• 1  Stick Butter
• 1  cup Yellow Onion (diced)
• 1/2  Cup Celery (diced)
• 3  Tbsp Minced Garlic
• 1/4  Cup All-Purpose Flour
• 2  Cups Chicken Broth
• 2  cup Whole Milk
• 1/4 Tsp Salt
• 1/4  Tsp Black Pepper
• 2  Cup Frozen Mixed Vegetables (thawed)
• 2  Cup Cooked and Shredded Chicken
• 1 1/4 Cup Shredded Sharp Cheddar Cheese

Topping:

• 1  Cup Shredded Sharp Cheddar Cheese
• 1  Cup Crushed Ritz Crackers
• 1/4  Cup Grated Parmesan Cheese
• 4  Tbsp. Butter, melted

Directions:

First, preheat the oven to 400F. Cook the egg noodles until al dente in a pot with boiling water. Drain and pour the noodles into the casserole baking dish. In a large skillet, melt butter. Add onion and celery and saute until tender. Stir in the minced garlic and flour and cook for about 1 minute. Then, pour in the chicken broth and milk. Bring it to a simmer and stir constantly.
