- 1 tablespoon of olive oil
- 1 cup of diced yellow onion
- 2 garlic cloves (minced)
- 1 lb of boneless skinless chicken breasts (cubed)
- kosher salt to taste
- freshly ground black pepper
- 1 cup of uncooked rice
- 2 cups of chicken broth
- 1 cup of heavy cream
- 2 cups of broccoli (florets only)
- 1 cup of shredded cheddar cheese
- ¼ cup of panko breadcrumbs
How to Make Cheesy Chicken Broccoli Bake
Step 1:
Place a large skillet over medium-high heat and add olive oil. Once hot, add onion and garlic. Saute until fragrant for about 5 minutes.
Step 2:
Add cubed chicken, then season with kosher salt and ground black pepper. Cook until golden on all sides for about 6 minutes more.
Step 3:
Add 1 cup uncooked rice, 2 cups of chicken broth, and 1 cup of heavy cream. Stir until well combined. Bring it to a simmer, then continue cooking until the rice is fully cooked. It will take about 15 minutes or more. If it becomes too dry, add more broth.
Step 4:
Mix in 2 cups of broccoli florets and 1 cup of shredded cheddar cheese. Cook until the cheese is melted and the broccoli is tender.
Step 5:
Evenly sprinkle ¼ cup panko breadcrumbs on top then season with salt and ground black pepper. Place in the broiler and broil until golden brown and crispy for about 2 minutes. Serve and enjoy!
