Place a pot over medium heat then add 4 tablespoons of butter. Once melted, add the chop onions and saute for 2 minutes. Add the garlic and cook for a minute. Next, add all-purpose flour and mix until well combined.
Pour the chicken broth and mix until the flour is dissolved.
Once dissolved, add 1 tablespoon of salt, 1/2 teaspoon of black pepper, 1/4 teaspoon of paprika, and 1/4 teaspoon of nutmeg. Mix until well combined.
Mix in shredded carrots and broccoli pieces. Lower the heat and cover. Let it simmer for about 15 minutes.
Add 2 cups of half-and-half and 3 cups of cheddar cheese. Mix until the cheese is completely melted. Turn off the heat.
Serve and enjoy!
