Make the gnocchi. In a bowl, combine powdered potatoes, salt, and nutmeg. Stir in boiling water until well combined. Add 2 egg yolks and 1 cup of flour. Mix until well combined.
Knead the mixture on a floured surface for a minute. Take 1 tablespoon of the mixture and roll it into a ball using floured hands. If it sticks to your hands, roll it in more flour. Place on a baking sheet lined with parchment paper. Press it with your thumb. Repeat with the remaining mixture.
Fill a deep saucepan with 2 inches of water and let it simmer. Once simmering, carefully drop the gnocchi, working in batches. As they float on top, remove from the simmering water using a slotted spoon. Place on a clean waxed paper.
Make the soup. In a very large pot, add the extra virgin olive oil and heat it until it shimmers. Once shimmering, add onion, celery, carrots, and garlic. Sauté until the onions are translucent. Stir in 1/3 cup of flour to form a roux. Next, whisk in the chicken stock. Cover it and let it simmer for about 10 minutes.
Add the chopped chicken, spinach, heavy cream, nutmeg, salt, and pepper to the pot. Stir to combine, then cover. Let it simmer for 5 minutes more on medium heat.
Add the gnocchi to the soup and gently stir. Let the soup simmer for 3 minutes more.
