Ingredients:

  • 2 cans of tuna, drained
  • 1/4 cup red onion, finely diced
  • 3 tbsp fresh parsley, finely chopped
  • 1/2 tbsp dried oregano
  • salt, to taste
  • ground black pepper, to taste
  • 1/2 cup bread crumbs
  • 1 egg, whisked
  • grated parmigiano-reggiano, to taste
  • 1 – 2 tbsp bomba sauce
  • extra virgin olive oil, for frying

Directions:

Step 1

To start, drain the tuna as best as you can, then transfer it to a large mixing bowl. To that, add 1/4 cup finely chopped red onion, 3 tbsp finely chopped parsley, grated parmigiano-reggiano, 1/2 tbsp dried oregano, salt and ground black pepper to taste, 1/2 cup bread crumbs, one whisked egg, and 1 tbsp bomba sauce. Mix everything together until well combined.

Step 2

Once done, form them into patties and place them on the fridge for about an hour or longer to help keep them firm. Now, add extra virgin oil to a large pan, enough to cover about halfway up. Once the oil is hot, gently place the patties and fry each side for about two to three minutes or until golden brown. After frying, add to a plate lined with a paper towel to drain excess oil. Sprinkle some flaky salt and serve.
