This idea of Bacon Ranch Grilled Potatoes came to me recently. I lit up that grill and my family is hooked with this amazing combo of cheddar cheese, ranch dressing, and bacon. These are are some of our favorite flavors and it’s awesome that they’re combined for a quick and easy side dish for summer. When I grill I dislike the pace of the in and out of the kitchen. So if I’m grilling up my meat, I try to grill my side dish and veggies too, if at all possible. It just simplifies life a little. Do you know what I mean? We love grilled potatoes in foil. They’re perfect with seafood or chicken. And geez, they’re so good! Ranch dressing makes this recipe come together easily and quickly. Slice potatoes and add simple ingredients like bacon, ranch dressing, cheese and herbs for an excellent summer side dish. I love using fresh ingredients. Like most people I know, I certainly don’t have time to make everything homemade. But choosing fresh ingredients for my family is very important to me. I love that Litehouse dressings are fresh, without a lot of preservatives. And when I reach for these refrigerated dressings I know I’m making a better choice.

I was scrolling through Pinterest and there was one recipe that I just had to try right away. The Southwestern Chicken Packets had my name all over them, but I didn’t have plans to go camping anytime soon. Lucky for me Pinterest shares ways to make all of the recipes in her book with coals (briquettes or campfire), a gas grill, or a conventional oven, so these southwestern chicken packets come together easily in the oven and they were perfection!

Camping is what my hubby and I do to relax. Even if we can sneak away to the woods for a day or two we are in our happy place. Since we are relaxing, we do our best to keep the “work” to a minimum. Our grill has been getting used like crazy this summer! I can’t stand the thought of turning on my oven every night for dinner. Cooking on the grill is just so darn easy. One of my favorite things to grill are foil packet dinners. They’re so low maintenance and easy. You can grill just about anything in a foil packet. The flavors are intensified when cooking in foil because the liquid that’s inside is steaming and infusing the meat with flavor. Plus clean-up is so easy, just crumple up the foil and throw away! If there is one thing in life we need more of it is easy dinners. Dinners with minimal prep time, and even less clean up time. And this my friends is that kind of recipe. This foil packet kielbasa recipe is seriously easy to make, has great fresh flavors, and the clean up is as easy as it gets. Plus you can cook it several different ways, in the oven, on a grill, or even as a hobo dinner in the campfire, making it a versatile and family-pleasing meal! I bought pre-sliced mushrooms, and so I only had to slice the squash and the kielbasa. Then, I toss it all together in a bowl with some seasoning and olive oil. Next, I divide it onto the foil and cook. However, skip one step, and save even more dishes, by simply layering ingredients directly onto the foil and drizzling olive oil and seasoning over the top! I tried it both ways and the flavor was great regardless. If you want to dirty the extra dish, then don’t. 😉

Foil pack dinners are the best. There’s minimum effort involved, and clean up is an absolute breeze. And you don’t even need serving plates here. With individual foil packets, each chicken breast is cooked on a bed of baby red potatoes, seasoned with a flavor-packed mixture of Dijon mustard, lemon, and herbs. When ready to serve, each person has their own little packet of lemon goodness. Now how easy was that? 🙂

Foil packets are the whole reason I enjoy cooking outdoors. Chicken, potatoes and vegetables steam together in smoky barbecue sauce, and there is nothing to wash afterward. Perfect when it is too hot for the oven. Salt and Lavender has it.
13. Coconut Lime Shrimp Packets

Shrimp that taste like a beach vacation, with the shredded coconut to prove it. You blend coconut milk, lime juice and zest, garlic, cilantro, soy sauce and half a seeded jalapeno into a sauce, let a pound and a half of peeled shrimp sit in it for at least 30 minutes, then spread them in a single layer on sprayed foil and grill on medium for 10 to 12 minutes until they’re pink. The single layer is the part I’d underline, because piled up shrimp steam instead of char (and a pale shrimp is a sad shrimp). 14. Easy Salmon And Potato Foil Packets

Salmon and potatoes cook together here in 25 minutes, a pairing that usually takes two pans and a small argument about timing. The trick is slicing one potato paper thin, about a sixteenth of an inch, and fanning the rounds across a 12 inch sheet of foil so they cook through under the fish instead of staying crunchy (thin is the whole secret here, and I’d take my time with the knife). A 6 ounce fillet goes on top with a tablespoon of olive oil, then half an orange and half a lemon get squeezed over before you seal it and bake at 400F. It’s an easy recipe for two that looks like you tried much harder than you did, and Averie Cooks is where the full recipe lives, orange trick and all.
15. Tin Foil Hobo Dinner

Nothing fancy here, just a browned ground beef patty with cubed potato and diced onion piled around it, a few carrot coins and a heap of shredded yellow cheese on top. Then somebody drew a big squiggle of ketchup or barbecue sauce across the whole thing (I can’t tell which from the photo, and honestly I’d use both). This is the classic my family expects on every single camping trip. Ground beef, potatoes, carrots and onion layered into a packet with a little barbecue sauce. Simple, cheap, and it has never once disappointed. Six Sisters’ Stuff has the recipe.
18. Cajun Style Foil Packets

Skip the giant pot. This is a shrimp boil in four sheets of heavy-duty foil: corn cut into thirds, cubed red potatoes, a pound of smoked sausage and 25 shrimp, all splashed with half a cup of melted butter, half a cup of chicken broth and as much Cajun seasoning as your people can take (they like Tony Chachere’s, and so does most of the South). Tuck the shrimp near the top of each foil packet, which the recipe is particular about and I would be too, then give it 30 to 40 minutes at 400 degrees, outside or in the oven, flipping once halfway. Favorite Family Recipes wrote up the full recipe, and their warning about the steam when you open it is not a joke.
20. Philly Cheesesteak Tin Foil Dinners

Picture a cheesesteak, then swap the roll for potatoes and let provolone melt over all of it. Each 14 inch square of foil gets a quarter pound of ground beef pressed into a layer, with chopped Russet potato, green pepper, onion and sliced mushrooms piled on top and a slice of provolone to finish. Salt it more than feels reasonable (the recipe says the salt disappears in there, and I’d listen when they get bossy), then bake at 400 for 20 to 25 minutes on a cookie sheet, no flipping and no double wrapping. Juicy chicken topped with melted mozzarella, grilled tomatoes, fresh basil and balsamic. It is restaurant worthy and comes together on a camp grill without any fuss at all. My favorite of the summer mains. Get it from Averie Cooks.
22. Hot Ham and Pineapple Campfire Sandwiches

Hawaiian pizza’s cousin who went camping. Stir 2 tablespoons of Dijon into 1 tablespoon of honey, spread it on the bottom of a thawed Rhodes French roll, fold on some deli ham, lay a pineapple ring over that and top it with cheddar, then wrap each one tight in heavy-duty foil. About 20 minutes over hot coals or on a rack over the fire and the cheese runs out the sides onto the foil (which, in the photo, looks like the best part). 23. Baked Foil Fish Packets With Asparagus And Tomato

The oven does all the thinking on this one, which is my favorite kind of easy recipe on a weeknight: tilapia over asparagus and tomato, sealed up and left alone for 30 minutes at 375F. Lay trimmed asparagus down the middle of a 2 foot sheet of foil, add sliced tomato and a little salt, set a 6 ounce fillet on top, rub it with 2 teaspoons of olive oil mixed with half a teaspoon of chili garlic sauce and finish with thin lemon rounds before you fold the long sides to the center and crimp the ends. When it’s done, crack one end open and pour off the liquid first, because the vegetables give up a surprising amount of juice (and the steam will come looking for your face). 24. Stuffed Peppers In Foil Packets

Stuffed peppers, but each half gets its own foil packet, so nobody’s fighting over who got the one with more cheese. In the photo there’s a red half and a yellow half, both packed with rice and ground meat in a tomato sauce and capped with white cheese that’s gone brown in spots (the brown spots are where the flavor is, I will die on this hill). I’d guess the foil nest is what keeps each half upright and tidy, which is more than I can say for most stuffed peppers. Foil under the tortilla, tortilla on the campfire grate, and that’s the entire setup. You spread a tablespoon of Tostitos salsa con queso over a flour tortilla, load half of it with a quarter cup each of sliced grilled chicken, rinsed black beans and shredded Mexican blend cheese, fold it over and set it on a piece of foil with the ends left open. Then it sits right over the fire until the cheese melts and the tortilla blisters and browns in patches (the blistered patches are the ones you fight over). Somebody looked at potatoes au gratin, a fancy French side dish, and decided it belonged on a grill, which I find deeply funny and completely correct. Warm 2 cups of heavy cream with shallot, garlic, thyme, a full tablespoon of black pepper and half a teaspoon of red pepper flakes until it steams, pour it over 4 pounds of thin sliced new potatoes split across four packets and seal them up over low indirect heat with the lid down. Near the end you open the tops, add grated Fontina or Gruyere and give it about 10 more minutes covered (the potatoes standing on edge in the photo are optional, but they do make the whole thing look like it cost money). Budget the full 90 minutes for six people who will go quiet, and the full recipe, cream ratios included, is over on Crunch Time Kitchen, where I’d happily lose an afternoon.
27. Camping Mac ‘N Cheese

Mac and cheese with cheese pulls that long deserves its own campsite. The shortcut is a jar of Alfredo: cook a cup and a half of elbows, rinse them cold, then stir in 8 ounces of the sauce with sharp cheddar, parmesan, mozzarella and enough milk to keep it loose, since it’s going to tighten up over the fire. It goes into four mini foil pie tins sprayed with nonstick, then under a foil lid and onto a rack 2 to 3 inches above coals you’ve let burn down (the crispy browned edge in the photo is the reward for waiting on the fire, and I’d wait). Lauren’s Latest even gives you an oven version, 350 for 20 to 25 minutes, so the full recipe earns its keep at home too, and there’s plenty more where it came from.
28. Grilled Vegetables in Foil Packets

Nobody gets excited about the vegetable side until it shows up looking like this. Wide strips of yellow squash and zucchini with the skin on, red and orange bell pepper strips and whole green beans, all glossy with oil, hit with coarse black pepper and sealed two packets at a time, with what looks like chopped garlic or shallot hiding in the bottom (I’d vote garlic, and I’d vote for a lot of it). It’s the rare camping food that’s green on purpose, and it’ll share the fire with whatever else you’re cooking. 30. Jalapeño Cilantro Lime Steak Foil Packets

One packet, one steak, one very good night. Everything is measured per person: a thin cut steak (they used rib-eye, which tells me what kind of people they are), a whole sliced jalapeno on top, a quarter onion and some bell pepper strips, a squeeze of lime with the rest of the lime tucked in alongside, cilantro and butter dotted on the foil under and over it all. A second 12 by 12 sheet goes over the top and you seal all four sides, then it’s 8 to 10 minutes over medium high heat with one flip and a 2 to 3 minute rest before you open it. Of all the tin foil recipes here, this is the one your kids will actually eat, and I say that with love. Two Hebrew National hot dogs go in the middle of a big square of foil (one to three fit, depending on the appetite), with thin sliced fingerling potatoes, red pepper strips and red onion rings tucked over and around them, then a drizzle of olive oil, salt and pepper and a fold into an envelope. Fifteen to 20 minutes over direct heat and the dogs brown up while the potatoes go tender underneath. Scallops are the fanciest thing anyone has ever put in foil, and the audacity is exactly why I’d make this one first. The sauce is lemon juice, olive oil, Worcestershire, garlic, coarse black pepper, 2 tablespoons of Sriracha and half a cup of broth, whisked together and poured over 8 or 9 jumbo shrimp and 3 or 4 colossal scallops on heavy-duty foil (build it inside a dish so the foil holds its shape while you pour, a small trick that saves a big mess). About 8 minutes on a hot grill, then open it carefully to check that the shrimp have gone pink, and after that you’ll need a fork, a napkin and a moment.
