Ingredients:

  • 1 lb ground beef
  • 1 medium brown onion, diced
  • 1 1/2 tsp garlic, minced
  • 1/4 tsp cajun seasoning
  • 1 tsp sweet paprika
  • 1 tbsp white sugar
  • 1 can (15 oz) tomato sauce (or puree)
  • 1 can (15 oz) chopped tomatoes
  •  1 1/2 cups of cooked brown rice (or white rice)
  • 3 tbsp olive oil
  • 6 cups of green cabbage, cut into 1-inch cubes)
  • 1 cup grated carrot
  • 1 cup grated mozzarella
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • dill or parsley, for serving

Directions:

Step 1

Heat 1 tbsp olive oil in a large skillet over medium-high heat, and saute the onions until soft. Next, add the grated carrots and ground beef. Continue sauteing until the meat turns brown. After this, add the minced garlic, 1/2 tsp ground black pepper, 1 tbsp white sugar, 1 tsp salt, 1 tsp sweet paprika, 1/4 tsp cajun seasoning, 15 oz tomato sauce, and 15 oz canned chopped tomatoes. Stir all together, then lower the heat to medium-low. Simmer everything for ten minutes. Once done, transfer the mixture to a heavy-bottomed pot and stir in the cooked rice. Set it aside.

Step 2

Now, heat another tablespoon of olive oil in a large skillet over medium heat, then add the chopped cabbage along with 1/4 cup of water. Simmer the cabbage until softens, then add half of it to the bottom of a greased casserole dish. After this, add a layer of the ground beef mixture, then repeat with one more layer of cabbage and ground beef. Sprinkle 1 cup grated mozzarella on top, then cover the casserole dish with aluminum foil. Bake for 20 minutes, then remove the foil and bake for another 20 minutes or until the cheese melts. Garnish with some dill or parsley. Serve and enjoy!
