This one-pot cabbage roll casserole is made only in 30-minutes which is a quick, and easy dinner recipe by Catherine’s Plates on YouTube. So, if you like cabbage rolls, or need a recipe using cabbage, try out this recipe. I’ve never thought about using cabbage for a casserole because personally, I’ve only had it in soups. This is a new recipe for me because I’ve never heard about it before. I think this is an interesting recipe because it’s mixed with other ingredients with melted cheese on top. A lot of cabbage roll recipes require rolling, but this recipe is made to be simple.

Ingredients:

  • 2 tbsp cooking oil
  • onion, diced into big pieces
  • 1 1/2- 2 lbs Ground Beef
  • 3-4 cups cabbage, chopped into bite-size pieces
  • 1 (10 oz) can tomato sauce or tomato soup
  • 1 (10 oz) can Water
  • 1 cup uncooked white long-grain rice
  • 1 can Rotel tomatoes
  • 10 oz Chicken Broth
  • 1 tbsp minced garlic
  •  salt & pepper to taste
  • 1 cup shredded cheddar cheese

Directions:

First, in a large pot, add cooking oil and heat to medium-high. Place the diced onions into the pot and cook until softened. Add the ground beef and cook until brown. Drain if needed. Then, add the cabbage, tomato sauce or soup, water, uncooked rice, Rotel tomatoes, chicken broth, minced garlic, salt, and pepper.

Next, mix everything together and bring to a boil. Lower the temperature and let everything simmer with the lid on. Make sure the rice is done and the cabbage is tender.

As always, top off the casserole with cheese and let it melt. However, you can opt-out of the cheese for a healthier option, but I believe it isn’t a casserole unless you put cheese on it. This is a great way to eat cabbage and usually, I don’t find myself cooking it.
