In the South, we ate a lot of Bologna Sandwiches growing up,  my favorite way of making the classic Bologna sandwich is to fry it. Bologna has an interesting history, Bologna (or as some say baloney) is a sausage made from ground pork, beef, chicken, turkey, or any combination of the latter. The sausage originated in Bologna, Italy, where it was derived from the popular Italian sausage, mortadella. From there the sausage was brought to parts of Appalachia, the Midwest, the South, and Pennsylvania by German immigrants. It was cheap meat, which made it very accessible during the Great Depression. In the 1930s, it was common for people to buy slices of bologna at the deli and take it home and use it to prepare the lunch pails for work the next day. These sandwiches were usually served cold and could include toppings such as pickles, a slice of cheese, and a bit of iceberg lettuce leaves. In any case, we grew up eating and loving good old bologna. I was so excited to really dig into the history of this iconic food and even more excited to make this delicious fried sandwich recipe I saw on Youtube. I started by sauteeing some red onions in butter with salt and pepper.

Then I browned my Balogna in a nonstick skillet, you can get it as brown as you like it, it’s up to your own personal preference.

Then I put slices of cheese on top of the bologna and let it melt, then toasted two slices of bread and added spicy brown mustard to each.

Then I added my meat and my onions to the bread and Wow!!!!
