This mushroom gravy recipe by The Sauce and Gravy Channel will always be one of our favorite sauces. To make this homemade mushroom gravy, you only need 9 basic ingredients – butter, olive oil, mushrooms, thyme, flour, beef broth, soy sauce, sugar, and Dijon mustard. It is very simple to prepare and ready in just a couple of minutes. I tried many versions before, but this one tops it all. Make it at home, and I am sure it will instantly become everybody’s favorite.

Place a saucepan over high heat. Add 1 tablespoon of butter and 1 tablespoon of vegetable oil. Once it starts to brown, add the mushrooms and cook until tender. Add the sprig of fresh thyme and continue cooking until the mushrooms are golden brown.
Make a well in the center of the pan, then add 3 more tablespoons of butter. Lower the heat to medium and melt the butter. Once melted, mix in the flour, then stir with the mushrooms. Let it cook for about 2 to 3 minutes.
Add the beef broth and scrape the bottom and sides of the pan to remove bits. Add the soy sauce and let it come to a simmer over medium heat. Reduce the liquid until you get your preferred consistency.
Once the sauce is thick, turn the heat to low, then add the granulated sugar and Dijon mustard. Stir everything then remove the thyme sprigs. Make a taste test and adjust seasonings if needed. You can also add salt and pepper.
