I first had a carrot cake when I celebrated my birthday at a hotel. They gave me a free cake with a happy birthday sign. To be honest, I am not a big fan of carrots, but I still gave it a try. To my surprise, it was so good. I never knew It was that delicious. That’s when I started ordering carrot cakes from cafes. I always thought they were hard to make, but then I saw this carrot cake recipe by Tasty.

Turns out you just have to mix all the ingredients together. Making it is easy – anyone can do it at home even if you don’t have any baking experience! The cake is packed with carrots, cinnamon, ginger, cloves, allspice, and nutmeg. It pairs perfectly with the cream cheese frosting.

Preheat the oven to 350F, then line a 3 9-inch round pans with parchment paper and grease with nonstick spray.
Using the large holes of a box grater, grate the carrots to get 6 cups.
In a large mixing bowl, add the grated carrots and buttermilk. Stir until well combined.
In a different mixing bowl, sift the all-purpose flour, whole wheat flour, baking powder, cinnamon, ginger, salt, baking soda, cloves, allspice, and nutmeg.
In a large bowl using your electric hand mixer or in the bowl of a stand mixer with the whisk attachment, add the brown and granulated sugar, eggs, and vanilla. Whisk on medium speed for about 3 minutes.
While mixing, slowly pour the vegetable oil. Scrape the sides of the bowl halfway through, if needed. Continue mixing for about 2 minutes.
Add 1/3 of the flour mixture and mix until just combined on low speed. Mix in 1/2 of the carrot mixture. Continue alternating the flour and carrot mixture. Once done, remove from the bowl and mix using a rubber spatula.
Divide the batter between the prepared pans. Place inside the preheated oven then bake for about 25 minutes it until a toothpick inserted in the center comes out clean. Once done, let it cool for 10 minutes, then remove from the pans to cool completely.
In a large bowl, mix the butter, cream cheese, vanilla extract, salt, and vanilla bean seeds until creamy for about 1 minute. Add the powdered sugar and mix until silky and smooth for about 4 minutes.
Time to assemble the cake. Spread a little bit of the frosting on the cake board then place a cake layer on top. Spread 1 cup of frosting on top. Repeat with the remaining cake layers. Coat the top of the cake with the remaining frosting.
