It may be simple, but you’ll get blown away with its taste. I make this side dish twice or thrice a month, and so far, this is the only veggie casserole my family always requests from me; it’s just that delicious. Impress your family today by serving this mouthwatering recipe!

Ingredients:

  • 1 head of cauliflower, cut into pieces
  • 3 lemon slices
  • salt to taste
  • a bunch of dill
  • 1 stick of butter
  • 3 tbsp flour
  • 1 cup of milk
  • ground black pepper, to taste
  • a pinch of nutmeg
  • 2 cups of grated hard cheese
  • 2 garlic cloves, minced
  • 1 tbsp mayonnaise
  • herbs de Provence, garnish

For the Dip:

  • 3 cherry tomatoes
  • 2 garlic cloves, grated
  • 3 tbsp Greek yogurt
  • ground black pepper
  • salt
  • dill

Directions:

Step 1

Cut the cauliflower into pieces, chop three lemon slices, and set them aside. Next, salt a pot of water, then add the lemon slices, a bunch of dill, and the cauliflower pieces. Cover the pot with its lid and cook them for three minutes. Next, in a large pan, melt 1 stick of butter, then add 3 tbsp flour. Mix until the flour dissolves completely. After this, pour 1 cup of milk, and continue to mix until it thickens. Season with salt and ground black pepper to taste along with a pinch of nutmeg. Mix well.

Step 2

Back to the pot, drain the cauliflower pieces, transfer them to a large mixing bowl, and set it aside. Next, combine 2 cups of grated hard cheese, 2 cloves of minced garlic, and 1 tbsp mayonnaise in a small mixing bowl and set aside. Now, line your baking dish with parchment paper, lay the cauliflower pieces, and pour the white sauce on each piece generously. Sprinkle some herbs de Provence, then top each with the cheese mixture. Bake in the oven until the top gets brown.

Step 3

In the meantime, make the dip. Finely slice three cherry tomatoes and transfer them to a small mixing bowl. Add two grated garlic cloves and 3 tbsp Greek yogurt, then season with salt, ground black pepper, and dill. Mix well. Serve it together with the baked cauliflower. Enjoy!
