  • 3 eggs
  • 3/4 cup sugar
  • 2/3 cup melted unsalted butter, slightly cooled

Preheat your oven to 350 degrees F and line a 12-cup muffin tray with cupcake liners or muffin cases then set aside. In a large mixing bowl, add 2 1/2 cups plain flour, 1 tbsp baking powder, and 1/2 tsp salt. Whisk well and set aside. In another mixing bowl, crack three eggs and add 3/4 cup sugar. Whisk for three minutes or until it doubles in size. Next, add 2/3 cup melted unsalted butter, whisk for a minute, then add 2/3 cup milk, 1 tsp almond extract, and 1 tsp vanilla extract. Once done, even out the top, then sprinkle some almond flakes. Place the muffins in the preheated oven and bake for 20 minutes. After baking, let them cool in the pan for ten minutes, transfer them to a cooling rack, and let them cool completely before serving.
