I recently found this thick crispy steakhouse-style oven fries recipe by America’s Test Kitchen, on YouTube, and I was so happy to finally be able to learn a way to make my oven fries turn out delicious. The secret to these crispy steakhouse style oven fries is the corn starch and water mixture, that is applied to the potatoes before baking, that really does the crispy trick. The best potatoes to use are Yukon Gold because the skin is thin and you won’t have to bother with peeling. Also, the Yukon Gold skin really gets golden and crunchy, so it tastes as delicious as the potato itself.
In this thick crispy steakhouse-style oven fries recipe by America’s Test Kitchen, on YouTube, you will learn how to make oven fries taste exactly like a real deep-fried restaurant-style fry. You begin by adding 3 tablespoons of cornstarch to 3/4 cups of water and microwaving this mixture for 1 to 3 minutes until the mixture is pudding-like. Then you will slice your potatoes and coat them with the cornstarch paste and lay on the baking sheet.
Then, you will cover them with foil and cook them in a 425°F oven for 12 minutes. Then, remove the foil and cook for an additional 12 to 18 minutes. This will brown them nicely as you flip them several times.
This method of making oven fries is so delicious, I wish I had found it a long time ago.
