Sweet potato is one of my favorite vegetables to eat and I usually enjoy them as is or when they’re simply boiled. However, I would never say no to a seasoned, roasted, casserole, or more delicious version of sweet potatoes. The fact that there are a lot of recipes and ways to cook this veggie is so amazing but sometimes it can be confusing to choose which one to make.

It’s a dish that surely even the kids will enjoy eating and find yummy, they might even ask you for more servings or to make this more often. You can serve this for breakfast or whenever you like, you can even enjoy it all day if desired!
Step 1
Scoop half a cup of the sweet potato onto a plate, then mash it with a fork to break up the large pieces, and set it aside. Place a small pot on a stove over medium heat, then add the oats and milk, and stir them constantly for about 5 minutes.
Step 2
Once the mixture is hot, add the mashed sweet potato, then give them a good stir to combine, and keep mixing for an additional minute until the liquid has been absorbed. Sprinkle cinnamon or pumpkin spice on top, then stir well, and serve. Enjoy!
