Freezing flat can help food freeze as fast as possible with as little air exposure as possible. It also melts twice as fast compared to storing them in containers.
This is also a great way to organize your food as you can easily stack them.
To freeze a solid or semi-solid food, start by transferring it to a zipper-lock freezer bag. Specifically use freezer bags, as regular ones are air permeable. Take the bag and flip the lip over, then transfer your food directly to it. Wash your hands after handling raw meat. Zip it up almost but not quite all the way. Put it back down on your board and push the air out starting at the corner and working towards the open end. Once you get to the top corner, all the air is out, seal the bag. Spread the meat out until you get an even nice layer. Label it and it’s ready for freezing.
For liquids, you are going through the same process. Flip the lip upside down and pour the soup. Seal it almost all the way. Starting from the bottom right corner start using the air out. Just when the last bit of air gets pushed out and the bags are about to leak, seal the bag all the way through.
Defrost your food by transferring it to the refrigerator for the night. You can also place it on an aluminum baking sheet to defrost it fast at room temperature.
