Ingredients for Santa Fe Baked Chicken:

  • 4 chicken breasts, boneless and skinless
  • Salt and pepper, to taste
  • 4 tsp of taco seasoning
  • (15 oz) can of black beans, drained and rinsed
  • 2 cups of corn kernels, fresh, frozen, or canned
  • 1½ cups of salsa, fresh, drained of excess liquid
  • ¼ cup of cilantro, chopped, plus more for garnish
  • 1 cup of Mexican cheese blend, shredded
  • 1 (4 oz) can of green chilies, chopped
  • Sour cream, for serving

Step 1

Preheat your oven to 375°F, then grease a 9×13-inch baking dish with nonstick cooking spray, and set it aside. Clean the chicken breasts and pat them dry, then season both sides with salt, pepper, and taco seasoning, and set them aside. In the prepared baking dish, add the black beans, corn kernels, salsa, and cilantro, then mix them until well combined, and place the seasoned chicken breasts on top.

Step 2

Cover the baking dish with aluminum foil, then place it in the preheated oven, and let it bake for about 35 to 40 minutes or until the chicken is cooked through. Once done baking, remove the cover, then spoon the green chilies on top of the chicken, and sprinkle the shredded cheese. Put it back in the oven uncovered, then allow it to bake for an additional 5 minutes or until the cheese has melted, and garnish with chopped cilantro. Serve with a dollop of sour cream and enjoy!
