It is easy to make and comes together quickly. You can make this comforting meal in under 30 minutes! Did I mention it’s also a one-pot recipe? You have less cleaning to do when you make this dish. It is packed with beef, cheese, tomatoes, black beans, kidney beans, and pasta. Serve it with coleslaw, cornbread, baked potato, salad, or biscuits.
Place a pot over heat and drizzle olive oil. Add the ground beef and break it into pieces. Add the onions and garlic. Cook until the meat is brown and the onions are translucent.
Add the black beans, kidney beans, cayenne pepper, cumin, chili powder, ground pepper, and salt. Mix until well combined.
Add the diced tomatoes, chicken broth, and elbow macaroni. Stir to mix. Cook until the pasta is almost cooked.
Mix in some cheddar cheese, then sprinkle the remaining on top. Cover it with the lid and let the cheese melt. Sprinkle chopped parsley on top. Serve and enjoy!
