A few weeks ago, I visited my friend and had a great meal with her, and one thing I can’t get off of my mind is her amazing sausage lentil soup. It was so good and heartwarmingly delicious that I couldn’t stop eating it. I begged her for the recipe she used and she showed me this one by The Magical Slow Cooker on Youtube.

I immediately tried making it at home and it still was so good, I just know this will be my new favorite go-to recipe. What’s even better about this soup is that it’s super easy to make with the help of a crockpot and it’s the perfect effortless soup idea for busy days or busy people. Step 1
Put the lentils in a mesh strainer, then rinse them under clean water, and shake off the excess moisture. Transfer the rinsed lentils to the crockpot, then place a large skillet on a stove over medium-high heat, and add in the Italian sausage and diced leeks. Break the meat apart and mix as you cook them until nice and brown, then turn off the heat, and transfer them to the crockpot.
Step 2
Next, add the carrots, celery, diced tomatoes, and the Herb & Garlic seasoning mix, then pour in the water, and mix them to combine. Place the lid on the crockpot, then set it to high, and let the soup cook for about 5 hours. Once done cooking, stir them well, then add the zucchini, continue stirring, and then put the lid back on the crockpot. Let the soup cook for an additional 30 minutes, then season it with salt to taste, and serve. Enjoy!
