Step 1
Preheat your oven to 375°F, then line a baking sheet with aluminum foil, and set it aside. Poke holes all over the sweet potatoes using the tip of a knife or fork, then place them on the prepared baking sheet, and put them in the preheated oven.
Step 2
Allow them to bake for about 1 hour or until very soft, then remove them from the oven, and let them cool for at least 30 minutes. Peel off and discard the skin of the sweet potatoes, then transfer them to a large bowl or a food processor, and mash them until smooth.
Step 3
Increase the temperature of the oven to 400°F and then position the oven rack in the bottom third. In a large mixing bowl, add the roasted sweet potato, sugar, milk, eggs, vanilla extract, ginger, cinnamon, and nutmeg, then whisk them together until well combined, and transfer the mixture into the pie crust.
Step 4
Place the pie in the oven, then let it bake for about 15 minutes, reduce the temperature of the oven to 350°F, and continue baking for about 40 minutes or until the filling is puffed and the center is wobbly. Place the freshly baked pie on a wire rack, then let it cool to room temperature, and serve immediately or let it chill in the fridge before serving.
