Ingredients for Twice-Baked Sweet Potatoes:

  • 3 medium sweet potatoes
  • 3-4 slices of bacon
  • 1 cup of Cheddar cheese, divided
  • ¼ cup of cream cheese
  • 2 tbsp of green onion, chopped
  • ½ tsp of salt
  • ¼ tsp of nutmeg
  • ¼ cup of pecans, toasted

How to Make Twice-Baked Sweet Potatoes:

Step 1

Preheat your oven to 375°F, then line a baking sheet with parchment paper, and set it aside. Wash the potatoes, then prick them with a fork several times on all sides, then rub each potato with olive oil, and place them in the prepared baking sheet. Place them in the preheated oven, then allow them to bake for about 45 to 60 minutes or until fork tender.

Step 2

While waiting for the potatoes to bake, place a large skillet on a stove over medium-high heat, then place the bacon, and cook them until nice and crispy. Transfer them to a plate lined with a paper towel to drain off the excess oil, and set them aside. Get the potatoes out of the oven, then cut on top of each potato, and scoop out the inside.

Step 3

Transfer the scooped flesh into a medium-sized bowl, then add the salt and nutmeg, and stir them well until combined. Add in ¾ cup of the cheese followed by the cream cheese, and green onion, then crumble the bacon, and add them to the bowl as well making sure to reserve some for the topping later.

Step 4

Scoop the potato mixture back into each potato shell evenly, then top them with the remaining cheddar cheese, and put them back in the oven. Let them bake for an additional 15 to 20 minutes or until the cheese has melted, then garnish them with the reserved bacon crumbs and green onion, and serve. Enjoy!
