For the marinade:

Add the chicken thighs in a bowl, and all the marinade ingredients. Mix until well combined. Cover and marinate for 30 to 40 minutes.
Make the honey mustard coleslaw. Start by combining mayo, yogurt, mustard paste, honey, black pepper powder, salt, and lemon juice in a bowl.
In a large bowl, add the shredded cabbage, red cabbage, carrot, and onion. Pour the sauce and mix until well combined.
Make the mayo sauce by combining all ingredients in a different bowl. Set aside.
To make the breading, add all breading ingredients in a flat container. Mix until well combined.
After marinating, shake the chicken to remove excess marinade, then coat it with the breading on all sides. Shake to remove excess. Dip in the marinade for the second time, and coat with the breading again. Shake excess.
Pour a generous amount of oil into a frying pan over heat. Once hot, add the breaded chicken. Cook until golden brown and crispy on all sides.
Spread butter on the buns and toast. Spread mayo sauce on the bottom bun, then add the chicken, cheese slice, and honey mustard coleslaw. Place the top bun. Serve and enjoy!
