Ingredients for Mexican Stuffed Peppers:

  • 4 peppers
  • 1 pound of ground turkey, beef, or pork
  • 1 tbsp of onion powder
  • 3 tbsp of taco seasoning
  • 1 small jalapeno, seeds removed and minced
  • (14.5oz) can of diced tomatoes, drained
  • (15oz) can of black beans, drained and rinsed
  • (15oz) can of whole kernel corn, drained
  • 2 tbsp of tomato paste
  • 2 tsp of minced garlic
  • 1 (8oz) package of shredded Mexican cheese

Step 1

Preheat your oven to 350°F, then line a baking sheet with aluminum foil, and grease it with a nonstick cooking spray. Wash the peppers and pat them dry, then cut out the stem, and slice each in half. Remove the seeds and the spongy areas, then place the halved peppers on the prepared baking sheet with their cut side up, and cover them with another sheet of foil.

Step 2

Place them in the preheated oven, then let them bake for about 20 minutes, and remove any excess water from the tray or pepper. While waiting for them to bake, place a skillet on a stove over medium-high heat, then heat it before adding the ground turkey, and oil if needed. Break the meat apart, then cook it until nice and brown, and add in the garlic, jalapeno, onion powder, tomato paste, and taco seasoning.

Step 3

Give them a good stir to combine, then add the ¾ cup of water, and let it simmer for about 5 minutes. Add the black beans and tomatoes, then let it continue to simmer for 5 more minutes, and divide the filling evenly to each pepper half. Top them with shredded cheese, then place them in the oven, and allow them to bake uncovered for about 15 minutes or until the cheese has melted. Serve and enjoy!
