In a mixing bowl, add flour, cornstarch, baking soda, and sea salt. Whisk to combine, then set aside.
In a separate medium bowl, add light brown sugar and granulated sugar. Whisk to combine. Pour in the melted butter while whisking, then lastly combine the egg yolk, egg, and vanilla extract. Whisk until smooth and well combined.
Add half of the flour mixture to the sugar mixture. Mix to combine, then add the remaining flour mixture. Mix until it becomes a smooth dough.
Fold in the roughly chopped chocolate. Cover the bowl with plastic wrap and refrigerate for an hour.
Preheat your oven to 350f, then line two sheet pans with parchment paper.
Get 2 1/2 tablespoons of dough and roll it into a ball. Coat it with the cinnamon sugar mixture then place it on the prepared sheet pan. Repeat with the remaining mixture, spacing them about 2 inches apart. Only add 6 cookies per sheet pan.
Flatten the cookies about 1/2 inch thick using your palm or the bottom of a glass.
Place inside the preheated oven and bake for 8 to 12 minutes or until golden brown around the edges.
