Ingredients:

Salad:

  • spinach
  • lettuce
  • raisins
  • sunflower seeds
  • pecan pieces
  • sliced strawberries
  • raspberries
  • mozzarella pearls
  • chicken strips

Dressing:

  • 1/2 cup freshly squeezed lemon juice
  • 1/2 cup canola oil
  • 1/4 cup honey
  • 2 tsp Dijon mustard
  • 1/2 tsp fine sea salt
  • 1/4 cup diced Vidalia onion
  • 1 1/2 tsp poppy seeds

Directions:

Step 1

In a bowl, add 1/2 cup freshly squeezed lemon juice, 1/2 cup canola oil, 1/4 cup honey, 2 tsp Dijon mustard, 1/2 tsp fine sea salt, and 1/4 cup diced Vidalia onion. Using an immersion blender, blend everything until smooth. After this, add 1 1/2 tsp poppy seeds and blend briefly just to spread the seeds. Once done, transfer the dressing to an airtight container and store it in the fridge until ready to serve.

Step 2
