For this recipe, you only need rolled oats, salt, peanut butter, maple syrup, and dark chocolate. It comes together easily as it does not require any baking! In a large bowl, add 3/4 cup of rolled oats, a pinch of salt, 2 tablespoons of peanut butter, 2 tablespoons of maple syrup. Mix until well combined.
Line a 6-cup muffin tin with cupcake liners. Equally divide the oatmeal mixture into the cups. Press to form a crust. Freeze for 15 minutes.
In a different bowl, add 1/2 cup of smooth peanut butter and 1 tablespoon of maple syrup. Mix until smooth. Add a heaping teaspoon of the mixture to each cup and flatten.
Melt the dark chocolate using the double boiler method or in the microwave. Pour the melted chocolate over the peanut butter layer for each cup. Refrigerate until it hardens.
