Strawberry Topping
Cream Cheese Filling
Step 1
Add 2 cups of strawberries, sugar, cornstarch, and lemon juice in a small saucepan, then place it on a stove over medium-low heat, and stir them consistently until they start to release juice. Mash the strawberries, then set the heat to medium-high, and bring them to a boil.
Step 2
Let it continue to boil for 1 minute while stirring consistently, then remove it from heat, and set it aside to cool. In a large mixing bowl, beat the cream cheese until smooth, then add the powdered sugar and vanilla extract, and keep beating until smooth and combined.
Step 3
In a separate bowl, beat the heavy cream until stiff peaks form, then transfer it to the cream cheese mixture, and fold until fully combined. Pour the mixture over the prepared crust, then spread it evenly, and set it aside.
Step 4
Check the cooled strawberry topping, then pour in the remaining strawberries, and give them a good mix until evenly coated. Pour the topping over the cream cheese filling, then spread it evenly, and cover the pie securely before placing it in the refrigerator. Allow it to chill for at least 4 hours, then serve, and enjoy!
