I’ve tried a lot of meatloaf versions before, but nothing beats a simple and classic recipe, just like this one by The Magical Slow Cooker on YouTube. This meatloaf is glazed with a yummy brown sugar sauce and is slow-cooked in a crockpot for 6 hours until perfectly juicy and tender.

Step 1
In a large bowl, add the eggs, diced onion, diced bell pepper, ketchup, milk, onion powder, salt, and pepper, then crush the saltine crackers, and add them into the bowl as well. Mix everything until combined, then add the meat, and continue to mix well until evenly combined.
Step 2
Grease the crockpot with nonstick cooking spray, then shape the meat into a loaf, and place it on the bottom of the crockpot. Cover it with the lid, then cook the meatloaf on a low setting for about 5 to 6 hours without opening the lid, and make sure to scoop and discard any fat.
Step 3
Once the meatloaf is almost done cooking, prepare the sauce, in a small bowl, add the ketchup, brown sugar, and mustard, then give them a good mix, and pour it evenly over the meatloaf. Cover the crockpot, then cook the meatloaf for an additional 30 minutes on a low setting, and serve. Enjoy!
