Cut the chicken into small bites, then transfer to a large mixing bowl. Add 3 – 4 tbsp yogurt, 1 tbsp lemon juice, 1 – 2 tbsp garlic & ginger paste, 1 tsp salt, 1 tsp red chili powder, 1/2 tsp turmeric powder, 1 tsp cumin powder, 1 tsp red chili flakes, 1 tsp garam masala, 1 tsp fenugreek, 1 tsp onion powder, 1 tsp paprika, 1 tsp coriander, and 1 – 2 tbsp olive oil. Mix well, making sure the chicken is well coated with the seasonings. Cover the chicken and marinate for 30 to 40 minutes. Once done, heat 1 tbsp olive oil in a large pan, then add the marinated chicken. Cover the pan and cook for eight to ten minutes.
Next, add the sliced onions and bell pepper, and continue to cook for four to five minutes covered. Set aside once done. In a medium bowl, combine 1/2 cup mayonnaise, 2 – 3 tbsp tomato ketchup, 1 – 2 tbsp red chili sauce, 1 tsp mustard paste, and 1/2 tsp tikka masala. Mix well and set aside. Arrange 18 sliced-in-half mini buns in a baking tray, then set aside the top. Spread the mayo mixture on each bun, followed by shredded mozzarella cheese, and then the cooked chicken. Add some more red chili sauce over along with shredded mozzarella cheese. Add back the top portion of the buns, then brush the parsley butter on top. Place the buns in the preheated 350 degrees F oven and bake for seven to eight minutes. Serve and enjoy!
