Cream Sauce:
In a pan, melt 2 tbsp butter, then add the diced onion and celery. Season with a pinch of salt and saute until the onion softens. In a large pot of boiling water, add 1 tbsp chicken bouillon, then drop the uncooked pasta. Cook until al dente. Next, make the cream sauce. Add 16 oz cottage cheese in a blender along with 1 envelope of Ranch seasoning mix and 1 cup Buffalo wing sauce. Blend until nicely combined. When the sauce starts to get a little too thick, stir in 1 cup of pasta water. Back to the pasta, once it’s done cooking, drain the liquid (don’t forget to reserve a couple of extra cups for later use).
Transfer the drained pasta to a butter-greased casserole dish followed by the shredded rotisserie chicken, the sauteed onion and celery, and half of the shredded mozzarella cheese, then pour the cream sauce. Toss everything together. Add the reserved pasta water into the blender cup, mix it, getting all the residual sauce, then pour it into the casserole. Continue tossing the pasta until combined. Add the rest of the shredded cheese on top. Sprinkle some smoked paprika for color. Place it in a 375 degrees F oven and bake for 30 minutes. Garnish with some freshly chopped parsley before serving.
