If you love potatoes, you have to try this air fryer twice baked potatoes recipe by Mason Woodruff. This is the best way to prepare your potatoes, as they are always a hit! Baked potatoes are already good, but baking them twice with a delicious potato mixture is so much better. It is packed with bacon, cheese, yogurt, and butter – all your favorites in one recipe.

The inside is so fluffy, cheesy, and flavorful, perfect with the crispy skin of the potatoes. When I first made this at home, everyone went crazy about it and asked me every single time when I would make it again. It turned out so good and way better than what I expected. You can serve it with roasted vegetables, chicken, salad, or pot roast.

Thoroughly wash the potatoes first, then dry them. Using a fork, poke holes around each potatoes. Spray them with cooking spray or rub with oil, then sprinkle with salt. Place them in the basket of your air fryer and air fry at 400F for about 35 to 40 minutes until they are cooked in the center.
When the potatoes are almost done, cook the bacon until crispy and drain the remaining grease. Chop into small pieces. Add 3/4 of the cooked bacon pieces in a bowl, followed by the butter, parsley, black pepper, and 3/4 cup of the cheddar.
Slice the cooked potatoes in half lengthwise and scoop out the insides using a spoon, leaving a thin layer of potato around the edges of the skin. Add the scooped potatoes in the butter mixture. Stir everything together until well combined.
Add the yogurt to the mixture and mix again.
Fill each potato skin with the butter yogurt mixture, then sprinkle the remaining cheddar cheese on top. Place back in the air fryer for 5 to 8 minutes at 400F until the cheese is melted.
Top them with the remaining bacon pieces and chives, if preferred. Enjoy!
