Ingredients for Mashed Potato Casserole:

  • 3.5 pounds of potatoes
  • 1 tbsp of salt
  • 2/3 cup of milk
  • 5 tbsp of unsalted butter, cut into ½-inch cubes
  • ½ cup of sour cream
  • 1 tsp of salt, or to taste
  • 1½ cups of freshly shredded mozzarella, tightly packed
  • 1 cup of cheddar cheese, tightly packed
  • 6 ounces of streaky bacon, chopped
  • ¼ cup of green onion, finely sliced

Step 1

Cook the bacon until nice and crispy, then place it on a plate lined with a paper towel to drain off excess grease, and set it aside to cool. Peel off the skin of the potatoes, then cut them into 1-inch chunks, and put them in a large pot. Fill the pot with water until about 4 inches above the potatoes, then add a tablespoon of salt, and place the pot on a stove over high heat.

Step 2

Bring it to a boil, then reduce the heat to a simmer, and cook for about 15 minutes or until very soft. Once the potatoes are cooked, drain off all the water, then put them back in the pot, and leave them for about 1 minute while giving it a shake every now and then.

Step 3

Pour in the milk, then add the butter, sour cream, and a teaspoon of salt, and mash them while mixing at the same time until smooth. Preheat your oven to 400°F, then assemble the casserole, start by spreading the potato in a baking dish, and smooth out the surface.

Step 4

Sprinkle all of the cheese along with the cooked and chopped bacon, then cover it loosely with foil, and place it in the preheated oven to bake for about 20 minutes. Remove the foil, then put it back in the oven, and bake it for another 10 minutes or until the cheese is bubbly and golden. Garnish it with green onions, then serve, and enjoy!
