As a baking enthusiast, I always search for recipes I could try on a weekend, and these cupcakes are one of my favorites to make. They’re perfect for small gatherings or even as an afternoon tea-time snack. You’ll surely keep this recipe in your home cooking recipe stash once you try it.
Chocolate Ganache Frosting:
Preheat the oven to 350 degrees F. Sift 1 1/2 cups all-purpose flour along with 1/4 cup unsweetened cocoa powder, 3/4 cup granulated sugar, 1 tsp baking soda, and 1/4 tsp salt in a large mixing bowl. Whisk well, then make a well in the center. To that, add 1 cup of plain yogurt, 1/3 cup vegetable oil, and 1 tsp vanilla extract. Stir together with the flour, then add 1/3 cup lukewarm milk. Gently mix until smooth (don’t overmix). Once done, divide the batter into 12 cupcake liners. Place them in the preheated 350 degrees F oven and bake for about 20 minutes.
Once done baking, transfer the cupcakes to a wire rack and let them cool at room temperature. After this, put a hole in the center of each cupcake, then insert one store-bought truffle. Add 2 cups chopped semi-sweet chocolate and 2/3 cup heavy cream in a mixing bowl, then microwave for 30 seconds. Once melted, stir in 3 tbsp unsalted butter and mix until incorporated. Let it sit at room temperature for two hours or refrigerate for 20 to 40 minutes until thick. After this, put it on a piping bag and pipe the ganache over the cupcakes. Serve and enjoy!
