In a large skillet, add the ground beef and cook until brown. Season with 1 tsp garlic powder, 1 tsp onion powder, and a pinch of salt and ground black pepper. Once the meat is cooked, add 2 cups of Minute rice, 1 tbsp tomato chicken bouillon powder, and 1/2 tsp ground cumin. Stir around, then pour 1 3/4 cup water. Spread it nicely, then top it with 1 1/2 cups of your favorite enchilada sauce and 8 oz shredded mild cheddar cheese.
Cover the skillet with its lid and let everything cook for ten minutes until the cheese fully melts. (Lower the heat at this point.) After cooking, remove the lid and garnish with freshly chopped scallions. Serve and enjoy!
