I absolutely love how fast and easy this recipe comes together. The first thing you need to do is prepare the ingredients. Once all ingredients are prepared, start sautéing the vegetables, then brown the chicken and add the other ingredients. Let them cook until tender, then top with cheese and serve. How simple is that? You can serve it with white rice, cornbread, coleslaw, or sweet potatoes.

Add the avocado oil in a large skillet over medium-high heat. Add the onion, garlic, and bell pepper. Saute for about 5 minutes or until the onion is translucent.
Move the veggies to one side of the skillet then add the sliced chicken. Let it cook for 5 minutes, stirring occasionally.
Add the fire roasted tomatoes, zucchini, cilantro, and taco seasoning. Mix everything until well combined, then cook on medium-low heat for about 10 minutes or until the vegetables are tender.
