When deciding on a dish to serve for lunch or dinner, I always opt for something very easy and simple to prepare using only a few ingredients but at the same time very tasty and hearty. I want the people who eat at my table to leave with a full and satisfied stomach so I make sure to use recipes that are proven delicious.

However, there are times when I’m too busy or there’s just too much stuff in my hands that I can’t commit to preparing food, and when that happens, my go-to recipe is this cherry tomato pasta by The Cooking Foodie on YouTube. It’s super simple, quick, and tasty that you wouldn’t notice it was done in just 30 minutes or less!
Step 1
Place a large pan on a stove over medium heat, then add the olive oil, and heat it before adding the garlic. Quickly stir and saute for about 30 seconds or until fragrant, then add the cherry tomatoes, and continue to stir until well combined.
Step 2
Add ¼ cup of water, then cook them over medium heat for about 15 to 20 minutes, and make sure to stir and mash occasionally until the tomatoes are completely soft, you can add more water if needed.
Step 3
While waiting for the tomatoes to cook, place a large pot on a stove over medium-high heat, then fill it with water, and add 1 tablespoon of salt. Bring it to a boil, then add the pasta, and cook it until al dente. Now back to the sauce, season it with salt and pepper to taste, then add the basil and red chili flakes and give them a good stir.
Step 4
Once the pasta is cooked, drain off all the water saving only about ¼ cup, then add the pasta to the sauce followed by the reserved pasta water, and give them a good toss until evenly combined. Grate over some cheese, mix well, then serve with more cheese on top, and enjoy!
