Preheat your oven to 350 degrees F and grease a 9″ x 9″ baking dish with some cooking spray. Set it aside. Next, combine a 7 oz packet of cornbread mix, 1/2 cup milk, and one large egg in a mixing bowl. Transfer it to the prepared pan and bake for 15 minutes. In the meantime, prep the other ingredients. Cook the ground beef in a large pan until brown, then add 3 tbsp taco seasoning and 1/3 cup water. Mix well. Next, add the drained Mexicorn and Rotel and continue to mix until combined. Set aside.

In another bowl, combine 2 cups of sour cream, 1/2 cup of chopped green onions, and 2 cups of shredded Mexican cheese blend. Mix well. Now, it’s time to assemble the casserole. Take the cornbread out of the oven and layer the ground beef mixture on top. Next, spread the sour cream mixture over the ground beef gently until everything is covered. Sprinkle some more shredded cheese, then bake it for about 25 minutes or until cheese is melted. Once done baking, allow it to cool for a few minutes, then slice into serving portions. Garnish it with some shredded lettuce, sliced olives, diced tomatoes, or a drizzle of taco sauce.
